To begin making the moroccan vegetable tagine, heat 1 tablespoon of oil in a large saucepan. add all the chopped vegetables (french beans, carrot, sweet potato, eggplant, zucchini, yellow bell pepper, and onion) and saute for 3-5 minutes or until the vegetables are slightly tender.

In another medium pan, take 1 tablespoon of olive oil and saute minced garlic, turmeric, curry powder, ground cinnamon, salt, and black pepper over medium heat for 3 minutes.

Add the saute spice mix into the vegetable mixture.

Stir in the orange juice, almonds, raisins, and a pinch of salt.

Mix everything well and simmer for 15-20 minutes on low flame, allowing the flavors to meld together.
