How To Cook?

Heat rapeseed oil in a non-stick saute pan over medium-high heat. add minced garlic, finely chopped yellow capsicum, sliced red chilli, and the whites of spring onions. saute for 5 minutes.

Add cumin, ground coriander, turmeric, chopped tomatoes, most of the fresh coriander, and chickpeas to the pan. cook for an additional 1-2 minutes.

Stir in vegetable bouillon powder and enough liquid from the chickpeas to moisten the mixture. simmer gently.

In a separate large pan, bring water to a rolling boil. carefully crack the eggs into the boiling water and poach for 2 minutes. remove the poached eggs with a slotted spoon.

Stir the green tops of spring onions into the chickpeas. lightly crush a few chickpeas with a fork or potato masher.
