Rinse the basmati rice under cold water until the water runs clear. cook the rice according to the package instructions until it is fluffy and fully cooked.

While the rice is cooking, prepare the vegetables. dice the onion, tomato, bell pepper, and green chilies into small pieces. mince the garlic.

In a large skillet or frying pan, heat the extra virgin olive oil over medium heat.

Add the minced garlic to the hot oil and saute for a minute until it becomes fragrant.

Next, add the diced onion and green chilies to the pan. cook them until the onion turns translucent and soft.
