To prepare the thai-style papaya and bean salad, start by selecting a green and crisp raw papaya. ensure that the inside of the papaya is white in color.

Peel off the papaya's skin and cut it into thin sticks or julienne it using a sharp knife. you can also use a peeler specifically designed for making juliennes.

Trim the ends of the fresh beans and cut them into 1-inch pieces.

Finely chop the thai red bird's eye chilli and garlic clove. place them in a mortar and crush them using a pestle to form a paste. alternatively, you can use a food processor if you don't have a mortar and pestle.

In a bowl, combine the chilli garlic paste, lemon juice, fish sauce (or soya sauce), and brown sugar (or palm sugar). mix well to make the dressing.
