Gradually add the milk to the roux, whisking continuously to avoid lumps. cook the mixture until it thickens and becomes creamy, about 5-7 minutes.

Stir in half of the cheddar cheese until melted. season the sauce with salt, pepper, nutmeg, and garlic powder.
