How To Cook?

In a heavy-bottomed pot, heat oil and add minced garlic. saute for 10-15 seconds and add onions and green bell pepper.

Cook until the onions and bell peppers start to soften. add homemade taco seasoning, salt, diced jalapenos, and diced tomatoes. stir well to prevent sticking.

Once the tomatoes begin to soften, add water or vegetable stock to the pot.

Add sweet corn kernels and cooked kidney beans to the soup. mix well. bring the soup to a quick boil, then reduce the heat. cover the pot and let it simmer for 20 minutes.

In a small bowl, mix corn starch with a little water to create a slurry. add the slurry to the soup and quickly stir to avoid lumps. simmer the soup for an additional 3-4 minutes.
