Preheat the oven to 400 degrees fahrenheit (200 degrees celsius) and grease a baking sheet with cooking oil spray. set it aside.

Gently clean the mushrooms and remove the stems. place the mushroom caps on the baking sheet.

In a mixing bowl, combine the onions, garlic, bell peppers, zucchini, cherry tomatoes, thyme leaves, rosemary, salt, black pepper, and balsamic vinegar. toss well to coat the vegetables.

Spread the vegetable mixture over the mushrooms on the baking sheet.

Roast the vegetables in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized.
