To create the spicy zucchini tomato chutney, start by heating 1 tablespoon of sunflower oil in a pan over medium heat.

Add the green chillies and cardamom pods to the pan and saut„© them for about a minute until the chillies are slightly charred. transfer them to a plate.

In the same pan, add the diced zucchini and garlic pods. saut„© the zucchini until it becomes soft and takes on a light brown color. transfer the saut„©ed zucchini to the same plate.

Now, add the sliced sun-dried tomatoes to the pan along with the tamarind pulp. toss them together for about a minute, then turn off the heat.

Add the minced fresh coriander leaves to the mixture and stir until they wilt slightly.
