To prepare the spicy carrot-peanut chutney, start by peeling and chopping the orange carrot into small pieces.

In a blender or food processor, add the chopped carrot, roasted peanuts, fresh mint leaves, grated coconut, chopped onion, garlic, and green chilies.

Blend all the ingredients together to form a smooth and spicy chutney. adjust salt if needed.

In a small pan, heat gingelly oil (sesame oil) and add mustard seeds. let them splutter.
