To prepare the tangy plum curry, start by scraping away the outer layer of the bitter gourd. clean it from inside and cut it into thin rings.

Apply a bit of salt (about 1/4 teaspoon) to the bitter gourd rings and toss well to coat. let it sit for an hour to reduce the bitterness.

After an hour, wash the bitter gourd thoroughly and set aside to drain.

Heat a little oil in a kadai and roast the bitter gourd rings on low heat until they become crisp. set them aside.

Peel and clean the plums while the bitter gourd is roasting.
