To prepare the tangy amaranth greens curry, soak the tamarind in hot water, extract the pulp, and set it aside. you will need approximately 1-1/2 cups of tamarind water.

Heat oil in a heavy-bottomed pan. add mustard seeds and allow them to crackle.

Add asafoetida and curry leaves, and let them splutter.

Add the whole garlic cloves and chopped onions. saute until the garlic turns slightly golden and the onions become soft.

Once the onions are soft, add the chopped tomato and cook until it becomes soft and mushy.
