In a large pot, place the whole chicken and cover it with water. bring to a boil over medium-high heat. reduce the heat to low and let it simmer for about 45 minutes until the chicken is cooked through and tender.

Remove the chicken from the pot and set it aside to cool. once cooled, remove the meat from the bones and shred it into bite-sized pieces. discard the bones and set the chicken meat aside.

In a mixing bowl, combine the all-purpose flour, baking powder, and 1/4 teaspoon of salt. cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Gradually add milk to the flour mixture, stirring until a soft dough forms. set aside.

In the same pot used for cooking the chicken, heat some oil over medium heat. add the diced onion, sliced carrots, sliced celery, minced garlic, dried thyme, and bay leaves. cook until the vegetables are softened, about 5 minutes.
