To prepare the coconut chia pudding, mix the chia seeds and coconut water in a bowl and set it aside.

After 15 minutes, mix again to remove any lumps and refrigerate the mixture for 3 to 4 hours or overnight to allow the chia seeds to absorb the liquid and form a pudding-like consistency.

Just before serving, stir in the coconut milk to add creaminess to the pudding.

Peel and dice the fresh mangoes into bite-sized pieces.

To serve, layer the coconut chia pudding in individual bowls or glasses.
