To begin making the panchmel dal with minty tadka, first, rinse all the dals together and soak them in 3 cups of water for about 3 hours.

Heat ghee in a pressure cooker over medium heat and add the cumin seeds. allow them to crackle.

Now, add the bay leaf and cinnamon stick and saut„© for a few seconds until the aroma comes through.

Add the chopped tomatoes, turmeric powder, red chilli powder, and asafoetida (hing). saut„© for about a minute until the tomatoes slightly soften.
