Wash the bulgur wheat thoroughly and soak it in water for about 30 minutes. drain and set aside.

Boil the potatoes until they are fully cooked. peel and mash them in a mixing bowl.

Finely chop the ginger, garlic, and green chilies. add them to the mashed potatoes.

Grate the carrots and finely chop the cauliflower. add them to the mixture as well.

Add red chili powder, cumin powder, and salt to the potato mixture. mix everything together.
