To prepare the spiced potato and okra medley, start by preparing the vegetables. wash and dry the okra, trim the ends, and cut them into bite-sized pieces. peel and dice the potatoes into cubes.

Grind the mustard seeds and poppy seeds to a fine powder, and set this mixture aside.

In a heavy-bottomed pan, heat one teaspoon of cooking oil over medium heat. add the diced potatoes, sprinkle some salt, and stir-fry until the potatoes are partially cooked. cover the pan to speed up the cooking process.

Once the potatoes are halfway cooked, sprinkle turmeric powder and red chili powder over them. continue to sautËúÖ until the potatoes are fully cooked and have a golden hue. transfer the cooked potatoes to a bowl and set aside.

In the same pan, add the remaining one teaspoon of cooking oil. add cumin seeds and mustard seeds. let them splutter and release their aroma.
