How To Cook?

Roast and blend coconut: dry roast shallots, fresh coconut, and cumin seeds in a pan over medium heat until they turn golden brown. let this mixture cool down and then blend it into a fine paste using a hand blender.

Prepare potatoes: pressure cook the baby potatoes with the skin until they are half done. this usually takes about 3 whistles. once done, release the pressure naturally and drain the water. wash the potatoes under cold water to make it easier to remove the skin.

Saut„© aromatics: in another pan, heat coconut oil, add curry leaves, and let them splutter for a few seconds. add pearl onions, ginger, garlic, and green chilies. saut„© until they turn golden brown.

Add tomatoes: stir in the chopped tomato and saut„© until it is cooked and the raw smell disappears.

Spice it up: add coriander powder, red chili powder, turmeric powder, garam masala powder, and curry leaves. also, add the coconut paste. fry until the aroma comes out. if it's too thick, you can add water to achieve your desired consistency.
