To begin making the spiced cottage cheese tunday kabab, start by preparing the marinade. in a mixing bowl, combine hung curd, minced garlic, grated ginger, chopped green chillies, and all the spices - bay leaves, nigella seeds, cumin seeds, coriander seeds, turmeric powder, black pepper powder, cloves, cardamom, cinnamon, yellow mustard seeds, white sesame seeds, fenugreek seeds, fennel seeds, dry mango powder, red chilli powder, star anise, pomegranate seed powder, and black salt.

Mix the marinade well until it forms a smooth paste.

Add the cottage cheese (paneer) cubes to the marinade and coat them evenly. let the cottage cheese marinate in the spice mixture for at least 1-2 hours.

Heat sunflower oil in a pan for frying.

Once the oil is hot, add the marinated cottage cheese cubes in batches and fry them until they turn golden and crispy on the outside.
