To prepare spicy fenugreek rice (saoji methi pulao), start by preparing the saoji masala first. dry roast all the whole spices mentioned like black peppercorns, bay leaves, cinnamon stick, black cardamom, green cardamom, star anise, cumin seeds, fennel seeds, and poppy seeds, along with fresh coconut or desiccated coconut powder. (if using dry red chilli, dry roast it along with other spices.)

Grind the roasted spices in a mixer grinder along with red chilli powder into a fine powder. set aside.

Heat sunflower oil in a heavy-bottomed pan or cast iron handi. add cumin seeds and then add sliced onions.

Saute the onions until they become translucent and cooked. add ginger paste and garlic paste, and cook for 2 to 3 minutes.

Add chopped tomatoes to the mixture and cook until the tomatoes become tender.
