In a large saucepan or pressure cooker, heat the mustard oil until it starts to smoke. then reduce the heat to medium.

Add the asafoetida, cinnamon stick, bay leaves, green and black cardamom, black peppercorns, and cloves. saut„© for a minute until aromatic.

Add the sliced onions and cook until they turn translucent.

Stir in the chopped garlic, ginger, and green chilies. cook for another 2 minutes until the raw aroma disappears.
