To make thai spicy fish cakes, start by making a paste of the fish fillets in a mixer jar until you get a very fine minced texture. transfer it to a bowl and set it aside.

In the same mixer jar, add beaten egg, garlic paste, salt, galangal paste, finely chopped spring onions, coriander leaves, bird's eye chillies, thai fish sauce, thai red curry paste, lime juice, and paprika powder. blend the ingredients until you get a smooth mixture.

Gently mix together the freshly ground paste with the fish paste in a mixing bowl.

Shape the fish cake mixture into small patties by rolling them between your palms and slightly flattening them. lightly dust the patties with cornflour.

Refrigerate the patties for 15-30 minutes.
