To begin making spicy kerala fish curry, clean and cut the sardines into desired pieces.

In a small bowl, make a slurry by mixing red chilli powder, coriander powder, and fenugreek powder with a little water. set it aside.

Heat coconut oil in a clay pot (earthenware) or a non-stick kadai.

Once the oil is hot, add mustard seeds and let them crackle.

Add chopped shallots and garlic, and saute until they become translucent, about 2 to 3 minutes.
