To begin making the zesty lemon and ginger black eyed beans, pressure cook the black-eyed beans with 2/3 cup of water until they are tender but still have a slight bite to them. drain and reserve the cooking water.

In a pan, heat olive oil and add finely chopped onions and minced garlic. saute for a minute until the onions turn soft and translucent.

Add the yellow capsicum and saute for another minute.

Grate the ginger and add most of it to the pan, reserving a few julienned pieces for garnish.

Sprinkle cumin powder and red chili flakes into the pan and stir well to combine.
