In a wok or kadhai, heat sunflower oil over medium heat. add the red chilli, cumin seeds, and curry leaves. allow them to crackle and release their aroma.

Reduce the heat to low and add the coriander powder, turmeric powder, cumin powder, red chilli powder, garam masala, and dry mango powder to the oil. saute the spices for a few seconds, being careful not to burn them.

Add the boiled baby potatoes to the wok and mix well, ensuring that the potatoes are coated evenly with the spice mix. cook for 6-7 minutes over medium heat, stirring occasionally, until the flavors are well incorporated and the potatoes are roasted.

Adjust the salt according to your taste preferences. sprinkle lemon juice over the potatoes and give it a final mix.
