To make aloo bhey ki sabzi, peel and chop the potatoes into cubes. rinse the lotus stem and slice it into rounds.

Heat oil in a pan and add cumin seeds. let them crackle.

Add asafoetida, chopped onions, crushed garlic, and grated ginger. saute until the onions turn golden brown.

Add tomato puree and cook until the oil separates from the mixture.

Now, add coriander powder, turmeric powder, red chilli powder, and garam masala. mix well.
