To prepare the spicy sweet potato, broccoli, and tofu curry, heat a saucepan with oil. add finely chopped onions, ginger, and minced garlic, and saut„© until they turn soft and translucent.

Now, add the spice powders ‚Äì cumin powder, turmeric powder, red chilli powder, and garam masala ‚Äì to the pan. mix them well with the saut„©ed onions and spices.

Toss in the chopped tomatoes, green chilli, and a pinch of salt. cook until the tomatoes soften and the raw smell disappears.

For added richness, you can add cashew nuts to the mixture and saut„© for an additional 2 minutes.

Allow the mixture to cool down and then blend it into a smooth paste using a mixer, adding water as needed.
