How To Cook?

Cook the brown basmati rice in boiling salted water according to the package instructions. meanwhile, heat olive oil in a large frying pan over medium heat.

Add the butternut squash to the pan and cook for 2-3 minutes until lightly browned. add the red onion and curry paste, and saute for an additional 3-4 minutes.

Pour the vegetable stock into the pan, then cover and simmer for 15-20 minutes, or until the butternut squash is tender.

Add the tomatoes and chickpeas to the pan and gently cook for 3-4 minutes, allowing the tomatoes to slightly soften.

Remove the pan from heat and stir in the low-fat yogurt and fresh coriander.
