How To Cook?

Heat sunflower oil in a frying pan and add the mustard seeds. once they start spluttering, add the grated ginger and minced garlic. saute for about a minute until fragrant.

Add the butternut squash, shredded cabbage, turmeric, ground coriander, ground cumin, red chili flakes, and a pinch of salt. mix everything together well. if needed, add a splash of water to prevent sticking.

Cover the pan with a lid and cook over low heat for 7-8 minutes, allowing the vegetables to steam and soften.

After the cooking time, remove the lid and check if the butternut squash is cooked and tender. if not, cover the pan again and continue cooking for a few more minutes.

Once the squash is cooked, drizzle the stir-fry with fresh lime juice. adjust the seasoning according to your taste.
