To make the spiced carrot and capsicum stir-fry, begin by placing the diced carrots, a pinch of salt, and 2 tablespoons of water in a pressure cooker.

Turn off the cooker after 1-2 whistles and let the pressure release naturally. keep the cooked carrots aside.

In a pan, heat sesame oil.

Add mustard seeds, cumin seeds, and organic urad white dal. cook until the lentils turn brown.

Once the lentils turn brown, add curry leaves, asafoetida, and green chillies. cook for about 30 seconds to release their flavors.
