Preheat the oven to 350ÔøΩf (175ÔøΩc). in a large bowl, combine the eggs, mushrooms, broccoli, cheddar cheese, onion, green pepper, parmesan cheese, salt, and a pinch of pepper. mix well until all the ingredients are evenly combined.

Grease a shallow 2-cup baking dish and pour the mixture into it, spreading it evenly.

Bake the frittata, uncovered, in the preheated oven for 20-25 minutes, or until a knife inserted in the center comes out clean.

Remove from the oven and let it cool slightly before serving. cut into slices and enjoy this delicious and nutritious veggie and cheese frittata.
