How To Cook?

Rinse the potatoes thoroughly and boil or steam them in a pressure cooker, steamer, or instant pot until they are soft and fork-tender. if using a pressure cooker, cook for 5 to 6 whistles on medium heat with water completely covering the potatoes.

Once cooked, drain the water and set the potatoes aside to cool. peel and crumble the potatoes while they are still warm. alternatively, you can chop them into small pieces.

Peel, rinse, and thinly slice the onions. also, chop the tomatoes, ginger, green chilies, and coriander leaves. rinse and dry the curry leaves with a kitchen towel. chop the cashews.

Heat oil in a pan or kadai (wok) over low heat. add mustard seeds and let them crackle.

Add chana dal, cumin seeds, and optional urad dal. stir and fry until the lentils turn golden, making sure they don't burn.
