To prepare the andhra style potato stir-fry, peel the potatoes and cut them into cubes. boil the cubed potatoes in a pressure cooker with enough water for 1 whistle.

Allow the pressure to release naturally, then drain and keep the boiled potatoes aside.

Heat a kadai or pan with cooking oil, add mustard seeds and urad dal. allow them to splutter for about 10 seconds.

Add curry leaves and let them crackle for 10 seconds. then, add chopped garlic and sliced onions. saut„© until the onions turn light brown and crispy.

Add all the spice powders, including red chilli powder, turmeric powder, coriander powder, and cumin powder. stir well to coat the onions and garlic with the spices.
