To begin making the coconut-infused paneer curry recipe, soak the tamarind paste in hot water for 10 minutes to extract the pulp.

In a heavy-bottomed pan, heat 1 teaspoon of ghee.

Roast coriander seeds, cumin seeds, fenugreek seeds, dried red chilies, and black peppercorns one by one until fragrant. be careful not to burn the spices. remove them from the pan and set aside to cool.

In the same pan, add sliced onions and garlic. roast until the onions start to turn brown.

Add freshly grated coconut and continue to roast until the coconut becomes golden brown. remove from the pan and set aside.
