How To Cook?

Place the sweet potatoes in a pan of boiling water and cook for approximately 15 minutes, or until tender.

Meanwhile, heat the oil in a pan and saute the onion and carrots for 2 minutes. add the garlic and ginger and continue cooking, stirring, for an additional 1 minute. sprinkle in the curry powder and stir well. add 750ml of boiling water, vegetable stock cube, tomato puree, and lentils to the pan. cover and let it boil for 20 minutes until the vegetables are tender and the liquid has been absorbed. stir in the chopped coriander.

Once the sweet potatoes are cooked, drain them and mash them together with the yogurt. season with salt and pepper to taste.

Spoon the lentil mixture into a large dish or individual dishes. top with the mashed sweet potato mixture and sprinkle with coriander. serve with steamed broccoli, if desired.
