In a large bowl or wide-rimmed plate, take 2 cups of whole wheat flour (240 grams atta) and _ cup + 3 tablespoons of all-purpose flour (80 grams maida).

Add 1.5 teaspoons of salt or adjust as per taste.

Gradually add 1.25 to 1.35 cups of water in intervals while mixing and kneading the dough.

Knead the dough until it becomes slightly sticky in consistency, adding water as needed.

Cover the dough with a moist cotton napkin or muslin cloth and let it rest for 30 minutes.
