To prepare the sesame-ginger chicken stir-fry with bok choy and mushrooms, cut the boneless chicken into bite-sized cubes and set aside.

Wash the bok choy thoroughly and cut the heads in half. slice the root part crosswise into squares.

Wash and slice the mushrooms, and dice the red bell pepper into small squares.

In a heavy-bottomed pan, heat some vegetable oil and saute the onions until they release their water and turn slightly brown. remove them onto a plate lined with a tissue to soak up any excess oil.

In the same pan, add a little more oil and stir-fry the red bell pepper and bok choy until they are cooked yet still retain their crisp texture. place them on the plate with the onions.
