To make the green veggie pilaf, start by cooking the basmati rice. in a saucepan, combine the rice, green chilli, salt, a tablespoon of olive oil, and 2 cups of water.

Bring the rice to a brisk boil, then reduce the heat to low, cover the pan, and let the rice cook until all the water is absorbed. this will take approximately 15 to 20 minutes.

Once the rice is cooked, turn off the heat and let it rest for another 15 minutes. use a fork to fluff up the rice.

While the rice is resting, steam the fresh peas and broad beans with a pinch of salt until they are soft. set them aside.

In a wok, heat a teaspoon of oil and add the sliced zucchini and whole garlic pieces. sprinkle some salt and stir-fry on high heat until the zucchini slightly softens. then, turn off the heat.
