To prepare the lebanese lentil and rice pilaf, begin by parboiling the masoor dal in a pressure cooker with 2 cups of water for about 2 whistles. allow the pressure to release naturally, then remove and keep it aside.

In the same pressure cooker, heat oil and add cumin seeds, ground black pepper, and cinnamon stick.

Add the sliced onions and saut„© until they turn golden brown.

Mix in all the spice powders and saut„© for 1-2 minutes, reserving a portion for garnish.

Add the soaked rice and saut„© for a few more minutes. then, transfer the parboiled dal to the cooker, season it with salt and pepper.
