To prepare the coriander vermicelli stir-fry, start by soaking the rice sticks (vermicelli) in just enough hot water to cover them fully. let them soak for 3 to 4 minutes, then drain and set aside.

In a blender, make a fine paste by blending the coriander leaves (coarsely chopped), green chilies, coconut, and garlic.

Heat sunflower oil in a heavy-bottomed pan and add the dry spices - cloves, bay leaf, green cardamom, and star anise. saute until they release a delightful aroma, which should take a few seconds.

Add the sliced onions and fry them on medium heat until they become soft and light golden brown.

Now, add the carrots and green peas and cook until the carrots become soft.
