How To Cook?

Wash the amaranth leaves thoroughly under running water to remove any dirt or impurities. drain them well and chop them into small pieces.

In a pan or wok, heat some oil over medium heat. add mustard seeds and cumin seeds. let them splutter and release their aroma.

Add the urad dal split and saute until it turns golden brown. then, add curry leaves and asafoetida, giving it a quick stir.

Now, add the chopped amaranth leaves to the pan. season with salt according to your taste preferences.

Stir-fry the amaranth leaves on medium heat until they wilt and become tender. this should take about 5-7 minutes.
