How To Cook?

To begin making the lauki and wadi curry, start by preparing the wadis.

Wash and soak the moong dal in enough water for about 3-4 hours or overnight.

Drain excess water and pulse the moong dal a couple of times in a food processor to make a fine paste.

Add ginger, cumin seeds, dry red chillies, asafoetida, and salt to taste to the moong dal paste. mix well.

Arrange a baking tray with aluminium foil or parchment paper. use a piping bag or zip lock bag to drop small roundels of the moong dal mixture onto the tray.
